Adding flaxseed flour to baked goods gives not only a brown tint to the dough, but also a delicate, slightly moist structure to the products. In addition, it increases the usefulness of the dish due to healthy fats, proteins and fiber. These muffins can be a good alternative to morning porridge or a healthy dessert for those watching their figure. The crumb turned out to be a little moist, but surprisingly very tender and light, not heavy at all.

1. Required Products: flaxseed flour, oatmeal (I use oatmeal ground in a coffee grinder), cranberries, chicken eggs, baking powder, vanillin, salt and honey (also works great with stevia).

2. Separate the whites from the yolks. We don't need yolks. Combine whites with salt and baking powder. Let it sit for a while for a reaction to occur. Beat until light foam forms.

3. Add honey and flaxseed flour.

4. Mix well. The dough will be very thick.

5. Add boiling water, stir until lumps disappear. Add oatmeal and vanilla and mix again. Gently stir in cranberries.

6. Divide the dough into molds and bake in an oven preheated to 160-180 degrees for 15-20 minutes.

7. The finished cupcakes can be greased with milk or strong sweet tea, or you can leave them like that.

8. These cupcakes can be served as a dessert or as a separate dish for a snack or breakfast. The crumb turns out a little moist and dense, but juicy and tender.

These fluffy, soft flaxseed muffins cook in the microwave in seconds. I made the recipe on a whim, specifically for the microwave, I haven’t tried cooking it in the oven, I doubt it will turn out well...

Products

  • Flaxseed flour - 30 g
  • White of one egg
  • Unsweetened yogurt – 30 g

    For cream:
  • Unsweetened yogurt 20 g (tablespoon)
  • Skimmed milk powder - 5 g (teaspoon)
  • Cocoa on the tip of a knife
  • Sweetener to taste

How to make flax muffins

  1. Break the egg into a bowl; no yolk is needed, leave only the white.
  2. Add yogurt, flaxseed flour, baking powder to the protein.
  3. Sweeten and stir thoroughly.
  4. You will get a thick, sticky dough. Spoon it into silicone molds. You can wet your hands in water and form balls.
  5. Place in the microwave and bake for 1 minute 20 seconds at 900 W.
  6. Prepare the cream: sift skim milk powder through a strainer to avoid crumbs.
  7. Add yogurt, cocoa and sweetener, mix.
  8. Cut the finished muffins lengthwise into three or four pieces (rings) with a sharp knife. Apply cream.
  9. Pour yourself some hot tea or coffee and enjoy.

Baked goods made from flaxseed flour are soft. The cupcakes are tall, porous, and do not lose their shape after cooling. But only real flaxseed flour is suitable for them, not ground flax-seed. My yogurt Biomax is unsweetened, in my opinion it is better than Activia because it is less sour ( homemade yogurt it also turns out much tastier). A portion of cream comes out to 30 g, maybe not enough? Can be doubled, calculations below.

Some people are mistaken in counting ground flaxseeds flour. Almost half of the composition in the seeds is oil. And real flaxseed flour comes out after defatting the seeds, and this is done industrially. Flour processed in this way is stored for a long time and does not lose its properties.

Rye and wheat flour are inferior to flaxseed flour in terms of usefulness. It is low in calories, low in carbohydrates, but high in protein and fiber. You need very little of this bread to fill you up and you don’t get better from it. Flaxseed flour is good for digestion. The fiber in its composition cleanses the intestines like a brush and makes it healthier. It also lowers cholesterol, has a beneficial effect on blood vessels and prevents the formation of fatty deposits.

It is recommended to take at least 25 grams of fiber daily to protect against cancer diseases. This means that just 80 g of flaxseed flour is approximately the daily dose. It contains lignans - hormone-like substances that prevent the growth of cancer cells.

Flaxseed flour is rich in elements such as zinc and selenium, phosphorus and iron. No less important components of flaxseed flour are vitamins A, B and E. Just like folic acid, a vegetable protein that has great value in the process of hematopoiesis. Magnesium is needed for the successful absorption of potassium and calcium in the body. Its deficiency is harmful to the heart and bones. Flaxseed flour contains all three components, and healthy oat flour, like buckwheat, has ten times less magnesium and calcium. And bananas are seven times lower in potassium content than flaxseed flour.

Phytoestrogens are another important component. These are natural hormones that are needed for rejuvenation, slowing down menopause and normal operation all female organs.

Omega-6 and Omega-3 – healthy fatty acids – act in the same direction.

Contraindications and warnings

It is believed that flax flour has no contraindications. But flaxseed has a strong choleretic effect. Therefore, if you have pancreatitis, colitis or cholecystitis, you should use flaxseed flour with caution. And if there are stones in the organs, flax can provoke their movement. It is better to start using this product under the supervision of a doctor.

“What should I eat to lose weight?” - On that funny question There is a very serious answer: baking from flaxseed flour. That is, losing weight is both satisfying and tasty. And flour itself has long been used for these purposes as an additive to ready-made dishes. It can be meat dishes or lean. It is well suited for both breading and sauces or soups as a thickener. It is very convenient in which part of the cereal (no more than half) is replaced with flax flour. Such food will help cleanse and heal the body. And this is the first thing required to expel extra pounds.

Flax mucus acts as a laxative. It activates intestinal motility and cleanses it well.

For example, it is good to replace breakfast with a cocktail or sour cream. And to ensure a constant cleansing process, you can consume this mixture before bed. The intestines will heal at night. Or even take the cocktail twice, the first time instead of dinner - with honey or raisins, and the second time - before bed.

Baking with flaxseed flour You can partially (no more than half) replace wheat flour with flaxseed flour in yeast or unleavened dough. This is how any baked goods are made, from bread to gourmet confectionery

Flaxseed bread

  • wheat flour – 2 cups;
  • flax flour - 2 tbsp. l.;
  • flax seeds – 3 tbsp. l.;
  • dry yeast – 1 pinch;
  • honey – 1 tsp;
  • salt – 1 tsp;
  • whey or water – 1.5 tbsp.

Dissolve dry yeast and honey in heated whey. Add sifted wheat flour, salt and seeds to flaxseed flour. Knead the dough so that it remains slightly sticky. Cover and allow time to rise. When the dough has doubled in size, knead it well. Lightly grease the pan with oil. Place the loaf of bread in it and set aside again for another 30 minutes. Bake at 180 degrees for approximately 50 minutes.
The finished bread should be easy to remove from the pan. It is better to cut it when it has cooled completely.

Pancakes made from flaxseed flour

  • 1 glass of kefir;
  • 1 egg;
  • 0.5 tbsp. wheat flour;
  • 2 tbsp. l. flax flour;
  • 0.5 tsp. salt;
  • 0.3 tbsp. milk;
  • 1 tbsp. l. vegetable oil;
  • 0.5 tsp. soda

Beat together eggs with milk, kefir and vegetable oil. Separately mix all dry ingredients. Add them to the kefir-milk mixture and mix well. Fry pancakes in a greased frying pan.

Cookies with prunes

  • low-fat cottage cheese – 150 g;
  • flax flour - 3 tbsp. l.;
  • flaxseed – 1 tsp;
  • vegetable oil – 1 tbsp. l.;
  • butter – 1 tbsp. l.;
  • sugar – 1 tbsp. l.;
  • baking powder – 0.5 tsp;
  • pitted prunes to taste.

Creamy and vegetable oil mix thoroughly into cottage cheese. Then mix the cottage cheese with sugar. Mix all the flour with baking powder. Knead the dough. Chop the prunes into pieces. Divide the dough into pieces according to the size of the cookies, spread each piece into a flat cake, put the prune filling inside. Pinch the edges. Line a baking sheet with parchment, grease it with butter and place the cookies. Sprinkle tortillas on top flax seeds. Preheat the oven in advance and bake at 180 degrees for 25-30 minutes.

Flaxseed flour cake

  • 120 g wheat flour;
  • 4 tbsp. l. flaxseed flour;
  • 6 tbsp. l. water;
  • 125 g sugar;
  • 150 g butter;
  • 2 eggs;
  • 100 g raisins;
  • 1 packet of baking powder;
  • 1 packet of vanilla.

Grind the butter with sugar, add one egg at a time and gradually knead. Add vanillin. Combine wheat flour, flaxseed flour and baking powder. Gradually add flour to the liquid mixture and mix well. Then pour in 6 tbsp. l. water. At the end, add the raisins and mix again. Grease the mold with oil and pour in the dough. Bake for 30 minutes at 180 degrees.

Kissel made from flaxseed flour

Mix flaxseed flour (3 tablespoons) with one liter of hot boiled water. Use jam instead of sugar (to taste), add zest, vanilla, and cinnamon if desired. You can add honey to warm jelly.

Do you still think that something healthy (read: dietary) can’t be tasty? And even more so, it’s hard to understand how muffins, and even chocolate ones, can be dietary? They can! And now I will prove this to you, but first a little background...

A few years ago, I became seriously concerned about the issue of proper nutrition. I read a whole bunch of literature on this topic and gave myself some “educational education”, so to speak. As a result, I learned a lot of new things and gave up a number of products in my daily diet(left high-quality proteins, complex carbohydrates; removed “bad” fats, snacks and snacks such as sandwiches, and other “fast” carbohydrates). I revised my diet - reduced portions and increased meals (4-6 times a day, if possible).

Thus, slowly but surely, I lost 13 kg. To be honest, this result amazed me, but proper nutrition and the feeling of lightness has already become such a habit that I have become accustomed to making all dishes (I mean everyday ones) as healthy as possible. Now my credo in the kitchen: cook tasty, healthy, and without complicating it. Of course, I also love complex dishes, holiday ones, and even those that are best prepared according to original recipes(for example, cakes, muffins, pies - but more often I bake them not for myself, but for loved ones :).

Today I propose to prepare dietary chocolate-orange muffins from flaxseed and oatmeal. I will say right away that the consistency of the cupcakes is moist inside and very tender, they even somewhat resemble pudding cupcakes (those made in a water bath).

Baking made from flaxseed flour is rich in fiber, vegetable protein, polyunsaturated fatty acids, folic acid, vitamins B1, B2 and B6, antioxidants, potassium, magnesium, zinc. What’s especially nice is that the flour does not have a specific sharp taste (it is neutral), and in combination with cocoa powder and orange zest it’s just a bomb!

Flaxseed flour muffins: ingredients

  • crumbly cottage cheese – 150 g;
  • milk – 70 ml;
  • flaxseed flour – 1 tbsp. with a slide;
  • whole grain oat flour (*can be replaced with ground oatmeal*) – 1 tbsp. with a slide;
  • wheat bran (can be replaced with oat bran) – 3 tbsp;
  • egg – 1 pc;
  • medium apple – 1/2;
  • cocoa powder – 2 tbsp;
  • zest of one orange;
  • cane sugar/stevia/syrups – to taste (*I use ).

Flaxseed flour muffins: preparation

Turn on the oven to warm up (180 degrees).

Add milk to cottage cheese. Mix with a blender until smooth. Add flaxseed meal and stir again.

Peel half the apple, grate it, and add it to the dough. Grind everything thoroughly with a blender until pureed.

Add oatmeal, bran, egg. Stir the dough. Then add cocoa, sugar or to taste and grated orange zest.

After thoroughly mixing everything, place in molds (I have silicone ones; if you have others, don’t forget) and place in the oven for 40-45 minutes.
